The surface tension between the aqueous droplets and the continuous phase provides an encapsulation environment that mimics a cell wall. For perturbation experiments, a collection of mono-disperse droplets is desirable.

This was an aesthetically pleasing message that our $1000 microfluidics chip had clogged.
